Le Domaine d’Edouard Pinot Noir Les Collines de Vaux 2020

In the very north of Burgundy, right next to the world-renowned region of Chablis, lies the appellation of Ctes d’Auxerre and Domaine d’Edouard. Edouard Lepesme built his wine resum as a marketer for negociants of Burgundy and Champagne. In 2011, he started to work in the vineyards and cellars of some of the great domaines in France and around the world. In 2014, he was able to purchase 33 acres in Ctes d’Auxerre, planted to Pinot Noir, Chardonnay, Aligot and Gamay on soils of chalky-limestone. All grapes are grown organically, hand-harvested and with fermented with indigenous yeasts. In the winery, Edouard uses very low amounts of sulfur and no oak, which, combined with the cool climate and careful farming, results in wines of purity, finesse and balance.
This wine has a cool edge. Stalky red-currant fruits leave a fresh feel that balances the light tannins and core of dryness.
